Clear arcade mode and the side that you completed it with will have all the mobile suits that you killed in arcade more for versus mode.

It is possible to use two beam sabers in combat with a GUNDAM. Break the shield on the left arm (make sure nothing is left). When dashing repeatedly with R2, one of the dash combos result in two sabers being employed.
